Zucchini Cream

Zucchini Cream for soup or pasta Ingredients : 1 medium onion, 1 tablespoon oil or butter, 1/2 teaspoon fine sea salt (plus more to taste), 4 medium zucchini, 3 to 4 cups vegetable broth or chicken broth, 1/4 to 1/2 cup heavy cream, Optional: freshly ground black pepper, Optional: freshly grated nutmeg. Gather the ingredients. Halve, peel, and roughly chop the onion. Heat a medium pot over medium-high heat and add oil or butter. When the fat is hot or the butter is melted, add the onion and salt. Cook, stirring occasionally, until the onion is translucent and tender, about 5 minutes.

Meanwhile, trim and roughly chop the zucchini.
